Grilled Vegetables (parrillada de verduras)

On a large grill plate, heat some olive oil and fry the following vegetables:

Thinly sliced leeks (puerros), young garlic sprouts, chopped (ajetes), red & green peppers in strips (pimientos rojos & verdes), grated carrot (zanahoria rallada) and sliced courgettes (calabacines).  Add salt & pepper to taste.  This is a lovely accompaniment to grilled meats or fish.
