This doesn’t really need much explaining.  With any white fish, I just wash it, season it with salt and pepper and simmer it gently in water (or water with skimmed milk 50% each) until cooked through (10-15mins).

Serve with your favourite veggies (boiled peas or green beans, shallow fried mushrooms, asparagus).
