Definitely one of my favourite desserts!

Ingredients:
375g pure dark chocolate (Bourneville or Valor in Spain)
375g butter
375g Digestive biscuits
3 eggs, beaten
45g sugar

Method:
Line a bread tin with foil.  Grease with butter.

Break the chocolate into pieces and melt (either in a bowl over boiling water or in the microwave).  Melt the butter in another casserole (or in microwave).  In another bowl, beat together the eggs and sugar.

Slowly add the melted butter in a steady stream into the egg/sugar mixture, beating constantly.  Add the melted chocolate and incorporate, beating continuously with a fork.  Roughly break up the biscuits and incorporate into the mixture (using the fork).

Pour the mixture into the prepared, lined bread tin, cover and freeze until ready to serve.  You can serve this directly from the freezer, cutting with a knife into thin slices, as it defrosts almost immediately.

Some people add walnuts to the mixture, but I rather prefer it without.

You can actually serve it with ice cream, whipped cream, or even single cream – – but that’s really going over the top!!!
