GAMBAS AL AJILLO

Ingredients
400g prawns or shrimps
6-8 cloves garlic, finely sliced
Chilli peppers (guindillas) finely sliced or 2 dried chilli peppers
Virgen olive oil
Salt & fresh parsley

Method
Start by peeling the prawns or shrimps – remove heads, shells and intestines. Save the tails and maybe some of the shells (not the heads as they contain too much liquid).

Pour a good quantity of olive oil into a small frying pan or a clay pot which is apt for your hob. Heat the oil and add the prawn or shrimp tails/shells and fry for a minute or two until the oil is well flavoured. Discard these tails/shells and add the garlic slivers. Before they start to colour, add the prawns/shrimps and cook for a minute or two.

Sprinkle with freshly chopped parsley and serve hot in the clay pot or pan with lots of fresh bread!!!
