2 cloves garlic
1kg ripe red tomatoes
1tsp salt
200g bread (from day before)
30g white wine vinegar
150g olive oil

4 hard boiled eggs
100g serrano ham or crispy fried bacon
Parmesan cheese

Cut a cross in the base of the tomatoes and plunge into boiling water. Blanch for 1-2 mins then peel. Liquidize tomatoes with the garlic and salt. Add the bread and vinegar and repeat process.  With the machine running, slowly add the olive oil until all incorporated. Refrigerate well. Serve topped with chopped hard boiled egg, finely chopped serrano ham or chopped crispy bacon and paper-thinly sliced parmesan cheese.
