SOUP: CARROT & LEEK

Quick, simple and healthy!  I do this in the Thermomix, but if you don’t have one, just cut up the veg, fry the leeks in olive oil for 5-10mins then add the rest of the ingredients and simmer until tender (20-30mins).  Liquidize and enjoy!

6 carrots
2 large chopped leeks
1 medium sized potato, cut into 4
1L brik chicken stock (I use Gallina Blanca)
50g Olive oil
Salt to taste

Wash and peel the leeks and carrots, cut into large pieces and add to the Thermomix jug. Program 5 seconds at Speed 5-8. Open the jug and push down the veg which will be stuck to the walls of the jug.

Incorporate the oil and program 10mins, 100ºC, Speed 1.

Add the chicken stock, salt and potato and cook for 15mins, 100ºC, Speed 1.

Once the cooking time has finished, allow to cool then liquidize, Speed 5-10 for 1.5 minutes.
