Bacon, Dates, and Cheese Empanada Recipe

This is something I had never tried, nor ever even heard of, until one of my children made it!

Ingredients:

Puff Pastry (you’ll need one pack for the bottom and another one for the top)
Uncooked bacon
Dates (stoned and halved)
Mozzarella or any kind of white cheese (optional)
Onions, fried until soft and golden (optional)
An egg yolk, beaten
Pre-heat the oven to 180ºC.
Method:

Leaving the greaseproof paper from the packet underneath the dough, unroll it and place flat onto a baking sheet or oven tray.  Cover with pieces of cut bacon, then another layer with the dates, then the cheese (on this occasion, as you can see from the photos, I didn’t use either cheese or onions but 2 layers of bacon).  Dampen the edges of the pastry with water.  Now unroll the second packet of puff pastry, this time removing the greaseproof paper and lay it on top of the base. With a fork, seal the edges.

Brush over the entire surface with the egg yolk.  Make 2 or 3 slits with a knife in the middle and bake for 30-40 mins (according to packet instructions for pastry and type of oven).
