* 100 ml olive oil
* 250 ml water
* 2 tbsps sugar
* 20g fresh yeast
* 500g strong white flour
* 1.5 tsps salt
In the TMX jug, place the water, sugar and olive oil and heat for 2 mins, 40ºC, Speed 2.
Incorporate the fresh yeast, 5 secs at Speed 3.
Add half of the flour and the salt and program 8 secs at Speed 6.
Add the remaining flour and mix for 3 mins at Kneading Speed.
Leave the dough in a warm place to rise until doubled in volume.
Divide into 100g portions and shape as you wish (I like to roll each piece and form a knot). Leave to rise again for 20-30 mins. Meanwhile pre-heat the oven (180ºC).
Bake on the middle for around 20 mins.
