Don’t worry if you don’t have a Thermomix, just make it in a pan and liquidize it.

Ingredients (for 1/2L)

  • 750 g very ripe red tomatoes
  • 50 g red peppers
  • 35 g onions
  • 1 medium sized clove garlic
  • 10 g salt
  • 1 stick cinnamon
  • 1 clove
  • 20 g brown sugar
  • 20 g honey
  • 40 g white wine vinegar


• Place in the jug the roughly chopped tomatoes, pepper, onion and garlic and whizz up for 3 seconds at Speed 4.

• Remove the measuring cup from the top and place the simmer basket on the lid.  Program 20mins, Varoma temperature, and gentle stirring speed (velocidad cuchara).

• Remove the simmer basket and replace the measuring cup on the lid and liquidize for 1min, progressive speed 5-10.  Clean the walls of the jug with the spatula down towards the blades.  Check that all the veg is well liquidized.  Depending on the amount of liquid in the tomatoes, you will have to program the cooking time a few more minutes, Varoma temperature and gentle stirring speed (velocidad cuchara) until you get the desired consistency.

• Stick a clove in one end of the cinnamon stick and add it to the jug.  Add the remaining ingredients and program a further 40mins, 50ºC, and gentle stirring speed (velocidad cuchara). Add salt if needed and pour into a bowl to cool.  Remove the cinnamon stick/clove.  When cold, store in a jar in the fridge.  Leave to rest for 24hrs before using.
