It would appear that traditional guacamole isn’t blitzed up into a puree, although the flavour is just as delicious whichever way you choose to make it.

3 avocados
1/4 salad onion
2 ripe red tomatoes
Chili peppers (to taste)
3 lemons or limes
Large bunch of fresh coriander
Olive oil & vinegar

Peel the avocados (save the stones) and mash in a large bowl. Dice the onion and tomatoes and chop the chili pepper finely, if using. Roughly chop the coriander. Squeeze the lemons or limes and add a drop of oil, a drop of vinegar and salt to taste. Combine all the ingredients and place the avocado stones within the mixture to preserve the colour. Chill well before serving.
