Ingredients
Olive oil
1 onion, finely chopped
1 packet bacon, chopped (or chorizo if you prefer, or both)
*Minced beef (optional)
Half glass white wine
1 carton tomato sauce (tomate frito), or home-made if you have the time!
Thyme, salt
Spaghetti (or any other type of pasta you wish)

Method
Heat the olive oil and fry the onion until soft.  Add the chopped bacon and continue frying until cooked.  Add the wine and simmer until reduced.  Add the thyme, salt and tomato sauce and simmer for a couple of minutes.  Boil the spaghetti in salted water with a few drops of olive oil (to avoid the pasta sticking together), drain and mix with the sauce.  Serve with a sprinkling of your favourite cheese. I like freshly grated parmesan, but you could add a melting cheese, like cheddar, then gratinate it under the grill for a couple of minutes.

*You can also stir-fry a handful of minced beef to the bacon and onion mix if you wish (not too much).
Pasta is delicious whatever you decide to add to it!!
