FISH: COD FRIED IN EGG

FISH, FRIED IN EGG AND SALADFISH, FRIED IN EGG AND SALADFISH, FRIED IN EGG AND SALAD FISH, FRIED IN EGG AND SALAD

Quick and simple, for any type of meaty white fish really (cod, hake, monkfish etc.). Just wash and dry the fish.  Season according to taste.  Dip in flour to coat thoroughly then shake off the excess and dip straight into a couple of beaten eggs and fry in olive oil until cooked through and golden on both sides, turning from time to time.  Serve with salad or veg.
