Cottage Pie (Pastel de Carne)

Olive Oil (aceite de olive)
2 onions, chopped (or mixture of onion and leek) [cebollas o mezcla de cebolla y puerro]
1 packet bacon, chopped (bacon)
250g mushrooms, sliced (optional) [champiñones]
2-4 carrots, chopped (zanahorias)
Handful green beans, peas or other green veg of your choice (optional) [judias verdes, guisantes u otro verdura verde, opcional]

1kg minced beef (carne picada de ternera)
1-2tsps bovril
1/2-1 tsp cummin (optional) [comino]
1 tsp thyme (tomillo)
Salt & pepper to taste (sal y pimienta)

2kgs potatoes (cut into equal sized pieces) [patatas]
Salt, butter and milk (sal, mantequilla y leche)

Fry the chopped bacon in olive oil until golden brown. Add the onions (and leek if using) and carrots and fry for 10-15mins.

Season the minced beef and add to the onion mixture and fry until sealed, stirring constantly.

If using mushrooms, fry them separately in olive oil until all their liquid has evaporated, then add them to the meat base at the same time as the green veg.

Add the cummin, thyme, bovril and enough water to cover. Bring to the boil. Reduce the heat and add the green veg, then simmer for around 15-20 mins.
Pour into the base of a large pyrex dish.

Boil the potatoes in salted water for 15-20 mins, or until soft. Strain.
Melt the butter, add milk and heat through. Return the cooked potatoes to the pan and mash. Add more milk if necessary.

Top the meat with the mashed potatoes and spread evenly with a fork.

Bake in a pre-heated oven (180ºC) for 20-30mins, or until the potato has browned and the meat is bubbling.  Serve with HP Sauce!!!
