Chicken ‘Al Ajillo’

Ingredients (use quantities depending on how many people you’re serving)

Chicken thighs, legs, breasts or drumsticks, whichever you prefer (washed and dried)
8-10 cloves garlic, peeled and cut into slivers
Salt
Olive oil
White wine / water
Chicken with garlic sauce, Pollo al Ajillo 1

Method

Cover the base of a large shallow pan with olive oil and heat.  Fry the garlic, moving constantly, until golden.  Remove with a slotted spoon and save.

Salt the chicken and fry on both sides until golden. Return the garlic to the pan and pour over 1-1.5 glass of white wine and 0.5 glass water.  Bring to the boil, cover and simmer until the chicken is tender, turning occasionally (25-30mins).

Cut up some potatoes into chips and fry until golden – – the perfect accompaniment to this tasty garlic sauce!!
